The Brain Amazes Me


This past week Kurt and I took Gabriel and Adrianne to the Hill Aerospace Museum. I had been there before a decade or so ago. Since then I have learned a lot, I look for little treasures and I look at things differently.

Here is where we started in the history of flying and also where we are past beyond.

Isn’t it amazing what the brain can think up?

From wood to metal, from flimbsy to solid, from very slow barely above the ground to extremaly fast, high and powerful.

When we look at the history of anything we can see the amazing progress and the successes achieved. If we look deeper, we will find the tries that didn’t work and yet, taught us something.

So it is with our thinking, our faith and our growth.
We are limitless in creativity! We are limitless in whatever we decide to go deeply, with purpose, faith, energy and passion.
Life is meant to be lived to its fullest, it is up to us on how full life can and will be, how bright it will get and how joyous it will feel to the heart.
Take your self imposed limitations off and go Ollin (all in). You will never be the same again!


So, I watched this show Restaurant Impossible and the guy showed how to do deep-fried I think it was fish, not sure, however, I decided to try his advice on chicken nuggets.

Success! It was yummy! I had to post!

And of course, fries to go with it.

Cut up chicken into bite sides (I used 9 pieces of boneless thighs)

White flour with whatever seasoning salt you like (I ended up using a little over a cup of flour with 1 tsp of seasoning salt)

Bread crumbs mix (I used about 2 cups)

egg mix with milk (5 eggs with 1/3 cup of milk)

Dip the cut up chicken in the egg mix then the white flour. Dip it again in the egg mix and in the bread crumbs. Then fry!

It was very tasty!


My 10-year-old requested we had this for dinner last night. Easy and tasty…why not?

I used

5 crescent roll cans

3 13oz cans of chicken

2 cans of cream of mushroom

1 cup of sour cream


parmesan cheese

1/2 onion minced

2 Tbsp of butter

Melt the butter and add the onions, brown them until golden. Add the chicken, break it up into small pieces. Add the soup, sour cream and milk to thin it to taste.

Then open the rolls, put the filling in each individual roll on the wider part of it, sprinkle a bit of parmesan cheese into it, bring the corners together and pour a little more of the chicken sauce on top of it. Bake it as the directions of the can of rolls and enjoy!

My petite 10-year-old girl eat 5 of them…we are not going to count how many of them my teenage boy can put away ūüôā


We will meet hundreds, thousands of people through the course of our lives. Some will be in passing, some will stay a while, some will make a print in the soul that will never be removed and some are with us for the duration of our journey on the earth.

I have some dear friends that hold a place in my heart forever. We may not talk every day or even every year, however, we know who we are, where we are and we can count on each other.

Technology has made friendship up keeping easier. With e-mails and social media, we have the world at our finger tips, literally. Why not re-find the treasures we had in life at one time or another.

As you know, I moved to the U.S. from Brazil when I was 17. At first it took paper and pen, now it takes sitting in front of my screen and I can keep in touch with dear friends from grade school.

I have a dear friend that lives 5 minutes away, while I was moving to Texas and back to Utah, we always keep track of each other on the phone. We still do to this day.

There are dear friends that hold a special place in my heart and always will regardless of where our journeys take us.

Real friends are priceless, value them as such. They are the ones that can take a look at you and know you need to talk, cry, laugh, eat, dream, let go of stuff or just sit and be still…and the crazy thing, you can do the same for them.

Be aware of your real friends, they make life joyful and alive!

Be a real friend, you will find treasures beyond your wildest dream!

Nurture your friendships, they will help you in thick and thin places of your life.


Let me ask you this:

Do you like being judged?

I know I don’t. If I don’t like being judged then what¬† gives me the right¬†to judge others?

People will do things we don’t understand because we are not in their shoes, and if we were we would probably do it differently because we are different from each other. However, it is not for us to judge. If the opportunity is there to help them in any way we can, then let’s do it, without judgment.

We are in a society that carries a lot of judgment. The cars we drive, the clothing we wear, the toys we have or don’t have, the words we speak, the piercings, the tattoos, the drugs, the addictions, the financial situation, the health, the lack of health, the body shape, the lack of shape,¬†the living conditions, the religious beliefs, the relationship status…can you see how many opportunities we are offered to judge on the daily basis?

It takes a lot of time, energy and thinking to judge people basis and we do it all the time! Sad story to be told.

On Petite Bite #16 I talked about being vigilant of what you are thinking about…please, let go of judgment, it frees up a LOT of mind space¬†for things of no value.

There are times that we need to judge things to make¬†a decision of doing them or not, that is alright. What I mean is, I am talking to someone and the drug subject comes up,¬†I am invited to be a part of a group that is going to engage in drugs…I have made that decision ahead of time to not partake of it…in good judgment, I turn it down.

If I choose to sit there and judge them for it, that is wrong of me,¬†it is none of my business. They are free to choose!¬†Poor choice, good choice…it is their choice, so be it.

I believe there is a greater judge that will look at every page I wrote in my book of life . With an impeccable understanding, He is aware of everything I did. I hope judgment has no part on that book. Why? Because He is going to judge me as harshly as I judged anyone. That makes it a little easier to stop myself on my tracks and let go of judgment, it does no one any good.



Have you ever noticed that the things that you fear the most, that you think about the most show up out of nowhere?

The things that we keep on playing in the screen of our minds are the things we get to face in our journeys, one way or the other.

The mind is the only thing we have that is ours and not God’s, He made it that way to allow us to choose Him or not. We can choose what we do, how, when and where…the consequences of it…that is another story.¬†Nature was created by God and because of that it is full of laws. Yes laws. So, we can do more and better things in harmony with those laws or we can fight every day of our lives and be miserable trying to break them…which we can’t…we just hurt ourselves in the process.

Our power of thinking…that is where everything begins! Our dreams! Our fears! Our goals! Our journeys! The opportunities we come across! Everything!

There are times we meet incredible people who say exactly what we needed to know when we were searching for it. Why? Because we are keeping our mind busy with that subject, we are sending our energy and vibration out there and it brings us what we are looking for.

Miracles are brought that way too. How? When we are fervently praying in our minds, with an open heart and a contrite spirit…God can act in our behalf. Because we are acting according to our thoughts and heart.

This year I felt impressed to increase the amount of scripture reading by A LOT. At first I was kind of discouraged because that was more than I ever done before…then the Spirit was very sweet however very firm, ” Sarah, how can I change your mind and your heart if you don’t feed yourself daily with my Word?”¬† I can tell you that my mind has been changed, my heart has been soften and my being has more light, simply by reading His word daily and for a longer time than ever before.

Reading good books feeds the mind good things! Staying positive, changes the mind for the better! Being conscious of the things that you are saying, tells on your thoughts.

Do you say, “I am dumb, I can’t do anything right,” ” I can’t do this,” “I hate my life right now,” ” I hate my job,” ” I am scared of…,” ” I know I am going to fail at…” ? Listen to yourself, if what you are saying isn’t kind towards self or other people, then change the vocab!

What you think about day in and day out is what you live, produce and share. The mind is very powerful, be aware of what you put in there. Your happiness depends on it!


At our home we like to drink smoothies. My husband and son ask if it is healthy or tasty. Sometimes is more of one than the other.
My measurement usually is a handful of this, a handful of that.
This one has kale, a cutie little orange, frozen mixed berries, frozen strawberries, frozen peaches (they were sweet as candy in the summer, so I bought a bunch and froze them), frozen plums (someone gave us some during the summer and we couldn’t eat them fast enough, so I froze them), a Tbsp of Chia seed, frozen banana (when they are too ripe to eat, I peel them and wrap them individually in plastic wrap), half of an avocado and water. And if your greens are going bad faster than you can use them, freeze them too.
That’s my son’s lunch (by choice) and mine.
It tastes good. I should warn you, if you like it on the sweet side, add a spoon of honey or a few drops of stevia.
May I add, my son hates fruits and veggies, and mom is happy he drinks them without complaint. Because I am blending them, the whole thing is in there.

Have you ever said a prayer, gotten an answer that didn’t work with man’s math, economy or reality?
Yup, in those moments we are asked to trust and do, let go, create, speak, listen, stand still, look for, re-search what you’ve been starring at for days…you know, the “it doesn’t make sense” side of the equation.
Hopefully, we are doing it exactly how we receive the instructions to do.
Because God is a deliverer of miracles on the daily basis.

Today I was thinking…what if we were meant to be down, negative and fearful?
I think God would’ve created a whole different world for us to grow in…it would not have beautiful abundant skies, it would lack the majestic sceneries of nature, it would be hollow as far as hope goes and we would not see miracles all arounds us.
Thank heavens for the goodness of God! We can choose how we see the world, what we do with our vision and how we embrace life!
I choose to look up and enjoy the grey skies of the storm we just had, I know it will change to blue and the sun will shine again…I look for the majesty of God in the flower, the trees, the forests and the beautiful mountains that surround me…Hope is my constant companion because it lives where faith resides and that would be in my heart.
Soooooo…how do you handle the beautiful life you have been granted today? Let it be the miraculous event that God created just for you:)


I used to have an extremely sweet tooth. Sometimes it resurfaces…so being treats free, I thought it would be wise to keep something sweet that I can eat handy in the freezer.
My friend gave me this recipe.
Equal parts of raw honey, coconut oil and raw cacao.
Mix it, spread in a glass pan and score it. Put it in the fridge to set (15 minutes) and then cut it into SMALL pieces. Wrap it in plastic wrap and freeze.
It does give me the sweet and chocolate fix when I need a little something:)
